Eggless Banana Cake






Yesterday, my son completed 7 months. In celebration, I made an eggless banana cake.


Ingredients for Batter:

6 tbsp wheat flour

3 tbsp sugar

½ tsp baking soda

½ tsp cooking soda

1 large banana

75 grams (approx) butter

½ cup milk.

Ingredients for Garnish:

Raisins 1 tsp

Chopped almonds 1tsp

Fruit jam 2-3 tsp

Cocoa powder/bournvita/boost 3-4 tsp

Procedure for Batter:

Soften butter in a large bowl. Add banana pieces to the butter and mash. Add the milk, sugar, nuts, and raisins and mix well. Now, sieve the wheat aata and soda into the bowl. Mix well. Your batter will now attain dropping consistency like idly batter.

Grease a cooker pot well and pour one layer of batter. Sprinkle some chocolate powder or boost or bournvita on top. Pour more batter and decorate the edges with jam or fruit loops or any colorful confection. Add the final layer of batter and decorate the top as per your liking.



Procedure for Baking:

I did not use the microwave this time. I used an aluminum pressure cooker instead.

Remove the gasket and whistle of an aluminum cooker and heat it on the large burner of a four burner Faber stove for 5 minutes with the lid on. This is equivalent to preheating the oven. Then, turn down the flame and put one empty cooker pot in it and then the pot with the cake batter on top of it just the way you would stack up your cooker pots when you are cooking dal and rice. Put the cooker lid back on and leave it for 35 minutes. Remember the flame is turned down completely. Check if the cake is cooked by inserting a fork into it. Once the cake is cooked, switch off the flame and leave the cake in the hot cooker for another 10 minutes. Take it out and let cool.
